I was craving for something sweet and I cant figure it out..Hmmnnn..could it be cake or a chocolate? I dont know ..I just wanted something soft and sweet and something like a cake maybe. I went to the kitchen and opened the fridge and I saw some apples and carrots. At first I thought of Banana Cake but then I have headache so I cant just go out of the house to buy some bananas. Well, I grabbed some apples and carrots and proceeded to make my muffins. I never thought that this combination will freak out my husband and my son...yes..they thought its disgusting. Thank goodness,my daughter loved my muffins. At first I told my son its Banana Muffin and he began to eat. Then I told him..it was apple and carrot muffin, he freaked out and went away from the table. My husband laughed and told me that the combination was awful or out of this world. But I am just like that...as you can see my combinations would surprise them and wonder what is all about.I desperately convinced them that it tasted good because I love the outcome and I already ate four in a row...The next day I brought some for my co-workers and surprisingly they found my muffins good and yummy.Wow..these ladies surprised me really and I am glad they loved my muffins. After an hour my husband sms me and told me that he ate the left over muffins for breakfast and he told me that it was actually good..soft and fluffy. He thought the combination went fine after all. The problem was, he ate all of them and they were meant for my daughter. Now I need to make a new batch...
Ingredients:
2/3 cup sunflower oil
4 large eggs
1 cup grated apple
1 cup grated carrots
1 tsp vanilla
2 cups flour
1 and 1/4 cup brown sugar
1 box 3.5 ounces French Vanilla Pudding
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon powder
Direction:
In a bowl sift together the following:flour,brown sugar,vanilla pudding,salt,baking powder,baking soda and cinnamon.Set aside
In another bowl,mix oil,eggs,grated apple and carrots and vanila. Add the flour mixture to the egg mixture and mix until well blended.
Transfer the mixture into muffin liner and bake at 380 for 15 to 20 mintes.
Now its about time to enjoy the out of this world muffin!
Out of this world? Weird combination?....no no NO! a big NO...actually its exciting and fun to make them...a fun way to cure my headache and I just love the result.
Here they are..fluffy,soft and moist.I never thought apple and carrot would be this great.Next time Im gonna have to try them with icing...I bet they will be good as cup cakes too!Wanna try them?
