I was on hiatus for a month and seeing my food as one of your choices is a pleasure.
I still can not believe I made this cake. Its been weeks yet I still haven't forgotten the joy it has given to us. This cake is a head turner and lip smacking..so damn delicious and yes its peanut butter. ha ha ha! ..its classic and the most favorite cake in my home. Next would be the chocolate cake, of course.
Ingredients:
For the peanut butter cake
2 1/4 cup all purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 cup creamy peanut butter
6 tbsp butter
1/2 cup caster sugar
1/2 cup brown sugar
3 eggs
1 cup buttermilk
Direction:
Pre heat oven to 350 degrees. Grease and flour two 9 inch round cake pans. Set aside
Whisk together flour, salt, baking powder and baking soda. Set aside.
In a mixer using paddle attachment, cream together peanut butter, butter and both sugar for 3 minutes
Add eggs one at a time beating at medium speed for 1 minute between each addition.
Stop mixing and scrape down the sides of the bowl as necessary.
With the mixer on low speed, add half of the flour to the butter mixture. Slowly add the buttermilk. When the batter just starts to come together, add the remaining flour mixture, beating on low speed. When the mixture just starts to come together , remove the bowl from the mixer and finish incorporating with a spatula.
Divide the batter into two prepared pans. Bake for 30-45 minutes. Allow the cakes to cool in the pans for 10 minutes then cool completely before frosting.
For the peanut butter cream cheese frost
1 bar cream cheese, softened
1/2 cup butter
1 /2 cup creamy peanut butter
2 cups powdered sugar
2 tsp vanilla
Direction:
Place cream cheese in a bowl of your mixer, using paddle attachment, beat for about 1 minute. Scrape down the sides and add butter. Beat the butter and cream cheese on medium speed for 1 minute. Add peanut butter to the bowl and beat for 30 seconds on medium speed until well combined. Now with the mixer on low speed, add powdered sugar followed by vanilla. When its almost incorporated, turn the mixer to medium speed and beat until the mixture is velvety soft.
For the Chocolate Ganache:
1 cup semi sweet dark chocolate
1/2 cup whipping cream
1/2 cup whipping cream
Direction:
In a bowl, microwave the cream for 45 second.
Add in the chocolates and gently mix using a spoon or spatula. Set aside

And the lovely thing to do:
Ferrero Chocolates in a box of 18 pcs
Chopped and sprinkle after putting icing on the first layer and yeah...
Just decorate the way you want it. Feel free and happy.
