Chicken Breast In A Barbecue Sauce




I made this last weekend and this is one simple dish that I always go back to when I ran out of ideas to cook. This is actually Barbecued Wings but I dont want to use chicken wings this time so I bought chicken breast and I cut into cubes. The terrific thing about this dish is that you will not go wrong especially if you are in a hurry and you know friends are coming over and you are like..oh my G.. what am I going to cook!! blah blah. This is actually an appetizer but for us Filipinos, we can have it for whatever purpose it does to our palate.It is basically the same with Buffalo Chicken wings, the only difference is the sauce..this is heavy with more spices to give authentic barbecue taste.
Ingredients:
1 kg chicken Chicken Breast cut into cubes
2 tbsp light soy sauce
2 tbsp corn starch
1 tsp ground pepper
2 tbsp rice wine
Sauce:
1/2 cup ketchup
juice of 1 medium lemon
1/2 cup sprite or seven up
3 tbsp brown sugar
2 tbsp Dijon mustard
1/4 cup butter
1 tsp salt
2 tsp hot sauce (optional)
1 tsp black pepper ground
6 garlic cloves, grated

Direction
In a large bowl,combine chicken breast cubes,light soy sauce,corn starch,ground pepper and rice wine.
Mix them well and marinate for at least 15 minutes.
In a fry pan or wok, heat oil to 375F (190 C).
Fry chicken breast cubes by batch.
In large heavy saucepan, mix together BBQ sauce ingredients.
Bring to a boil, then reduce heat and simmer for 15 minutes.
Place the cooked chicken breast cubes in the simmering BBQ sauce.
Stir to coat and simmer for about 25 to 30 minutes or until you reach the desired consistency.
I have the most satisfying feeling in the end. One terrific dish that is so flavorful, simple and very addictive. I know that once I have  grandkids, flashes of memory of this great dish will be in my mind..fun, meaningful and it means family, love and simplicity. Come inside, grab a seat..Lets eat, Lets giggle and Lets be merry!
